This Spicy Lemongrass Chicken dish is a vibrant Southeast Asian-inspired main course featuring juicy chicken thighs marinated in fragrant lemongrass, fiery red chilies, garlic, and savory fish sauce. The chicken is perfectly cooked by grilling or baking, delivering bold flavors with a tender texture that’s low-carb, gluten-free, and dairy-free.

Ingredients

Chicken

  • 1 lb chicken thighs

Marinade

  • 2 stalks lemongrass, minced
  • 3-4 red chilies, chopped
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp vegetable oil

Instructions

  1. Prepare the marinade: In a bowl, thoroughly combine the minced lemongrass, chopped red chilies, minced garlic, fish sauce, and vegetable oil to create a fragrant and spicy marinade base.
  2. Marinate the chicken: Add the chicken thighs to the bowl with the marinade, ensuring each piece is well coated. Cover and allow to marinate for at least one hour to let the flavors penetrate the meat.
  3. Cook the chicken: Preheat your grill or oven to 375°F (190°C). If grilling, place chicken over medium heat and cook for 25-30 minutes, turning occasionally, until the chicken is fully cooked. If baking, arrange the chicken on a baking tray and bake for 25-30 minutes until cooked through.
  4. Rest and serve: Remove the chicken from heat and allow it to rest for a few minutes. Slice and serve the chicken on a bed of rice or your preferred side to enjoy the full flavor.

Notes

  • Marinating for at least one hour is essential to develop deep flavors; overnight marination can make it even more flavorful.
  • Use gloves when handling the chilies if you want to avoid skin irritation from the spice.
  • Adjust the number of chilies based on your spice tolerance.
  • The recipe is versatile: you can choose to grill for more smoky flavor or bake for convenience.
  • Serve with steamed rice or a fresh salad for a balanced meal.
