This Slow Cooker Cheesy Mozzarella Chicken is a creamy, comforting dish featuring tender chicken breasts cooked to perfection in a rich blend of mozzarella, parmesan, and cream cheese. Effortlessly prepared in a slow cooker, this recipe delivers a deliciously cheesy and creamy main course ideal for a comforting family dinner or meal prep.

Ingredients

Main

  • 3–4 boneless skinless chicken breasts
  • 240 ml shredded mozzarella cheese
  • 60 g grated parmesan cheese
  • 240 ml heavy cream or whole milk
  • 120 g cream cheese or thick double cream

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

Optional add-ins

  • Fresh spinach, mushrooms, or assorted herbs, for enhanced flavor

Instructions

  1. Season Chicken: Pat chicken breasts dry with paper towels. Season both sides evenly with salt, black pepper, garlic powder, Italian seasoning, and paprika to fully coat the chicken for flavor.
  2. Arrange in Slow Cooker: Place the seasoned chicken breasts in a single layer at the base of the slow cooker, ensuring even cooking.
  3. Prepare Creamy Mixture: In a medium mixing bowl, whisk together the heavy cream (or whole milk) and cream cheese until smooth and well combined without lumps.
  4. Cook Chicken: Pour the creamy mixture evenly over the chicken breasts. Cover the slow cooker and cook on low heat for 5 to 6 hours or on high heat for 3 to 4 hours until the chicken is tender and fully cooked through.
  5. Add Cheeses: Stir in the grated parmesan cheese throughout the creamy sauce. Sprinkle shredded mozzarella evenly on top of the chicken. Cover again and cook for an additional 10 to 15 minutes until the mozzarella is melted, bubbling, and golden.
  6. Serve: Either shred the chicken directly in the pot to create a creamy, cheesy shredded chicken texture or serve the breasts whole. Pair with your choice of cooked pasta, rice, mashed potatoes, or crusty bread for a complete meal.

Notes

  • For added nutrition and enhanced flavor, stir in fresh spinach, sliced mushrooms, or mixed herbs into the slow cooker during the final 30 minutes of cooking.
  • Adjust seasoning to taste before serving. Additional salt and pepper may be added if desired.
  • Use full-fat dairy ingredients for the creamiest, richest result.
  • Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
  • Check dairy product labels if preparing for someone with allergies or dietary restrictions.
