Instructions

  1. Combine Ingredients: In a standing blender or food processor, add the chopped tomatoes, peeled and chopped cucumbers, deseeded and chopped sweet red peppers, hemp hearts, balsamic vinegar, olive oil, salt, cracked black pepper, and any optional spices like smoked paprika, fresh basil, and hot chili flakes.
  2. Blend Thoroughly: Blend the mixture on high speed for 2 to 3 minutes, stopping to scrape down the sides as needed, until the gazpacho is completely smooth and creamy.
  3. Adjust Texture and Seasoning: If you prefer a thinner consistency, gradually add up to 1/2 cup of water while blending. Taste and adjust salt, pepper, and optional spices as desired.
